    Overview:

The Lincolnshire Poacher is a celebrated British farmhouse cheese, perfectly combining the rich, bold character of a traditional cheddar with the sweet, nutty complexity of an Alpine mountain cheese, like Comté or Gruyère. This award-winning cheese is handmade on the Jones family farm, nestled on the edge of the Lincolnshire Wolds, where the family has been farming for generations.

The cheese’s unique flavour profile, with hints of pineapple sweetness and a creamy, dense texture, makes it a standout choice for cheese lovers.

    History & Background:

Produced on Ulceby Grange Farm, the Lincolnshire Poacher has been crafted by the Jones family for over 30 years using milk from their own herd of Holstein-Friesian cows. The family’s commitment to sustainable farming and traditional cheesemaking methods is at the heart of this exceptional cheese.

The cheese is matured for up to 24 months, during which it develops its signature flavour. Its distinctive Alpine influence comes from the Jones family’s use of traditional Swiss methods, learned during visits to mountain dairies, which they have skilfully adapted to the Lincolnshire terroir.

    Cheesemaking Process:

    • Milk Source: The milk comes from the farm’s own herd of Holstein-Friesians, grazed on the lush pastures of the Lincolnshire Wolds.
    • Traditional Techniques: Using unpasteurised milk, the curds are hand-cut and pressed before being aged in wooden shelves to develop their flavour.
    • Maturation: Each wheel is matured for between 14 and 24 months, with regular turning and rubbing down to achieve its rich flavour and creamy texture.

    Taste & Texture:

    • Flavour:
      • A rich, long-lasting taste with layers of complexity.
      • Sweet, nutty undertones reminiscent of Swiss mountain cheeses like Gruyère or Comté.
      • Sharp, tangy notes with a unique pineapple-like sweetness.
    • Texture:
      • Smooth, dense, and creamy, with a close-knit consistency that is satisfying to slice and eat.

    Pairing Recommendations:

    • Savoury Pairings:
      • Crackers or crusty bread, with a dollop of onion chutney or spiced pear relish.
      • Perfect grated over soups, baked potatoes, or savoury tarts for a nutty depth.
    • Sweet Pairings:
      • Complement with apples, grapes, or figs to highlight its tangy and sweet notes.
      • Drizzle with a touch of honey or serve alongside dried apricots for a decadent finish.
    • Beverages:
      • Enjoy with a crisp white wine, like a Sauvignon Blanc, which balances its sharpness.
      • Pair with a full-bodied red, such as a Bordeaux or Malbec.
      • For beer lovers, a Lincolnshire bitter or a malty ale works beautifully.

    Culinary Uses:

    • Cheese Boards: A versatile addition that adds depth and contrast to any board.
    • Cooking:
      • Grate over pasta, risottos, or vegetable gratins.
      • Use as a topping for a luxurious cheese toastie or gourmet burger.
      • Stir into cheese sauces for an added Alpine-inspired twist.
    • Melted Dishes: Its smooth melting quality makes it a great choice for fondue or raclette-style meals.

    Storage & Serving:

    • Storage: Wrap in wax paper or cheese paper and store in the fridge. To maintain its freshness, ensure it is well-sealed after opening.
    • Serving Instructions: Allow to come to room temperature before serving to experience its full flavour and creamy texture.

    Awards & Recognition:

The Lincolnshire Poacher has earned a stellar reputation among cheese connoisseurs and has received numerous awards for its outstanding quality and flavour. Its unique blend of cheddar and Alpine characteristics makes it a favourite among both British and international cheese lovers.

    Conclusion:

The Lincolnshire Poacher is more than just a cheese—it’s a testament to the artistry and dedication of British farmhouse cheesemaking. Its bold, complex flavour and smooth, creamy texture offer the perfect balance of tradition and innovation. Whether enjoyed on its own, as part of a cheese board, or melted into your favourite dish, Lincolnshire Poacher promises a rich and satisfying experience that cheese enthusiasts will adore.
