Overview:
Délice de Bourgogne is a triple-cream cow's milk cheese hailing from the Burgundy region of France. Created in 1975 by Jean Lincet at Fromagerie Lincet, this soft-ripened cheese has earned a reputation for its luxurious, creamy texture and rich, buttery flavour. Its silky smooth texture is the result of the extra cream added during the cheese-making process, making it a true indulgence. The cheese is known for its mild yet decadent taste, perfect for slathering on crackers, bread, or fresh fruits.
History & Background:
Originally created in the Burgundy region of France in 1975, Délice de Bourgogne was a product of Jean Lincet’s innovation at Fromagerie Lincet. The cheese’s creamy consistency and mild, luxurious flavour quickly made it a favourite among cheese lovers, and it remains a beloved example of the triple-cream style, which is known for its added richness. As a soft-ripened cheese, it undergoes a delicate aging process, resulting in a smooth, buttery texture and a velvety white rind.
Cheesemaking Process:
- Milk Source: Made with cow’s milk sourced from local farms in Burgundy.
- Moulding & Pressing: The cheese is typically shaped into rounds or small wheels, with a velvety white rind that forms as it ripens.
- Aging: Délice de Bourgogne is a soft-ripened cheese, typically aged for a short period of time, allowing the extra cream to create its signature smooth and rich texture.
- Texture: The cheese has a silky smooth, buttery texture that is almost spreadable, making it perfect for enjoying with bread or crackers.
