Westcombe Cheddar

A traditional clothbound Somerset Cheddar made at Westcombe Dairy. It has the firm, slightly crumbly structure I want from this style, with savoury, earthy and sometimes gently lactic notes developing through maturation. I love it when a Cheddar tastes of more than strength alone, and Westcombe does exactly that: it has depth, length and a real sense of place.
