Waterloo

Made by Village Maid Cheese in Berkshire from Guernsey milk, which gives it a golden paste and serious richness. Young, it is mild and milky; as it ripens, the centre softens and the flavour becomes buttery, grassy and gently mushroomy. It is one of those cheeses that shows how different British soft cheese can be from French Brie.
