Hard from Västerbotten, Sweden
A hard cheese from Västerbotten in northern Sweden, made only in the village of Burträsk. The paste is firm and slightly crumbly, the flavour savoury, salty and slightly bitter. In Sweden, it is served with crayfish and baked into a savoury pie.
