Vacherin Mont-d'Or
Soft, spruce-bound from Vaud, Switzerland
Swiss Vacherin Mont-d’Or AOP is a seasonal soft cheese from the Vaud Jura, encircled with spruce and sold in a wooden box. As it ripens it becomes soft enough to spoon, with rich, creamy flavours and a distinctive woody, resinous perfume. It is a winter ritual as much as a cheese. Warm it gently if you like, but a perfectly ripe one needs very little intervention.
