Taleggio

Taleggio is a washed-rind cow’s-milk cheese from northern Italy with a thin, aromatic rind and a soft, supple interior. The smell can be assertive, but the flavour is usually much gentler: buttery, fruity, savoury and slightly tangy. It is one of the cheeses I recommend when somebody wants to venture into washed rinds without being completely knocked sideways.
