From the Swaledale Cheese Company in Richmond, North Yorkshire, this is a young, moist goat's cheese with a soft, open texture and a fresh, clean, slightly citrusy flavour. The goat character stays gentle. I like it for customers who want a Yorkshire cheese that isn't Wensleydale, and it is lovely with oatcakes and a little honey.
