Swaledale

From Richmond in North Yorkshire, Swaledale is a soft, moist cow's milk cheese with a light, open texture and a fresh, mild, slightly grassy flavour. It is one of only a handful of British cheeses with PDO status. Serve it young, with oatcakes and a little chutney.
