Stinking Bishop

Stinking Bishop is made by Charles Martell & Son in Gloucestershire and washed during maturation with perry made using Stinking Bishop pears. That washing encourages the pungent rind flora responsible for its famously powerful aroma. The surprise is the paste inside: soft, rich and far gentler than the smell suggests. It is one of my favourite cheeses for proving that a dramatic washed rind does not necessarily mean an aggressive flavour.
