Soft, bloomy from Suffolk, England

A small, delicate cheese made in Suffolk by Julie Cheyney from raw Montbéliarde cow's milk. It is lactic and mousse-like when young, becoming softer, richer and more mushroomy as the thin bloomy rind develops. Inspired by the small cheeses of the Rhône-Alpes, it is one of the most elegant cheeses made in Britain.
