Soft, washed rind from Suffolk, England
The washed-rind sibling of St Jude, made in Suffolk from raw Montbéliarde milk. Washing the rind turns it sticky and pink-orange, and the paste becomes soft, oozing and savoury, with a rich, meaty depth. It is a small cheese with big character.
