Hard from Berkshire, England
A hard sheep's milk cheese from Village Maid in Berkshire, made in the spirit of an aged pecorino but sweeter and more rounded. The texture is firm and slightly grainy, the flavour nutty and buttery, with the gentle caramel note that aged sheep's milk brings. Lovely on a board, and excellent grated over pasta.
