Sparkenhoe Red Leicester

Sparkenhoe is a farmhouse Red Leicester made in Leicestershire, and it bears very little resemblance to the rubbery orange blocks that gave the name a bad reputation. The texture is firm yet yielding, while the flavour is savoury, nutty and gently sweet. Its colour comes from annatto, as is traditional. This is the cheese I use when I want to rehabilitate Red Leicester in one bite.
