A pyramid of goat's cheese from Norton & Yarrow in Oxfordshire, named after the nearby Sinodun Hills. The paste is fine, dense and lactic, with a bright, lemony freshness and a delicate wrinkled rind. A modern British goat's cheese of real finesse.
