Shropshire Blue

Despite the name, Shropshire Blue was created in Scotland in the 1970s, and today it is made in the East Midlands by Stilton makers. It is essentially a Stilton-style blue coloured with annatto, so the paste glows orange against its blue veins. The texture is creamy and slightly softer than Stilton, the flavour sweet and gently spicy. It looks spectacular on a Christmas board.
