Serra da Estrela

Queijo Serra da Estrela PDO is a Portuguese sheep’s-milk cheese coagulated with cardoon thistle. At the softer end of its maturation it can become wonderfully spoonable, with rich, lanolin-like sheep’s-milk flavours and the faint vegetal bitterness that thistle rennet can bring. It is a cheese with enormous personality, and one I would serve simply so nothing distracts from the texture.
