Selles-sur-Cher

A flat disc of goat's cheese from the Loire, coated in ash. The rind is edible and should be eaten: it adds a savoury, mineral note to the dense, moist, slightly lemony paste. The flavour is fresh and nutty, becoming richer with age. It is one of the most elegant Loire goat's cheeses.
