A log of goat's cheese from the Loire, coated in ash and threaded through the centre with a length of rye straw, which holds the soft paste together. The straw is engraved with the PDO name. The flavour is fresh, lemony and clean when young, turning nutty and richer as it ages. A beautiful cheese to slice at the table.
