Saint-Marcellin

A small disc of cheese from the Isère in the Dauphiné, often sold in its own little terracotta dish. Young, it is soft and tangy; fully ripe, the centre becomes runny and spoonable, with a nutty, yeasty richness. In Lyon, they eat it gloriously ripe. I sell it both ways, depending on who's at the counter.
