Soft, washed rind (bark-wrapped) from Gloucestershire, England
Made by King Stone Dairy in the Cotswolds and wrapped in a band of spruce bark, in the manner of the Alpine washed-rind cheeses. As it ripens, the paste turns soft, rich and almost spoonable, with a savoury, buttery flavour and a gentle resinous note from the bark. One of the most exciting modern British cheeses.
