Reblochon

The name comes from reblocher, to milk again. Savoyard farmers would hold back milk at the landowner's inspection, then milk the cows a second time to make their own cheese. Reblochon is raw milk and washed-rind, supple and creamy, with a nutty, buttery flavour and a gentle farmyard note. It is also the essential cheese for tartiflette.
