A log-shaped goat's cheese from Neal's Yard Creamery in Herefordshire, with a delicate, wrinkled rind. Inside, the paste is dense, smooth and lactic, with a bright, citrusy freshness that softens and turns creamy just beneath the rind as it ripens. It is a modern English classic and the goat's cheese I cut most often for a board.
