Rachel

Rachel is a semi-soft goat’s-milk cheese from White Lake Cheese in Somerset. It has a supple texture and a washed, natural rind character that gives it much more depth than a fresh goat’s cheese. Expect a sweet, nutty core with savoury, slightly earthy notes nearer the rind. I love it for people who say goat’s cheese is always sharp or chalky: Rachel is an excellent counterargument.
