One of Normandy's oldest cheeses, square and washed-rind, from the Pays d'Auge. The rind is golden and slightly sticky, the paste supple and creamy. It smells more assertive than it tastes: the flavour is buttery, savoury and gently nutty, with a grassy sweetness. Serve it with cider or Calvados.
