Pitchfork Cheddar

Made by the Trethowan brothers in Somerset, Pitchfork is a traditional clothbound Cheddar with a firm, sometimes crystalline texture and a wonderfully savoury personality. Expect layers of cultured butter, earth, stock and a bright acidity that keeps the richness in check. It is one of those cheeses I can give to somebody who thinks they already know Cheddar and watch them reconsider the entire category.
