Pecorino Sardo

Sardinia's sheep's milk cheese, sold young (dolce) or aged (maturo). The young version is supple and mild; the aged is firm, flaky and savoury, with a sharp, nutty depth. It is less salty than Pecorino Romano, which makes it better for eating than grating. Serve it with honey and walnuts.
