Hard from Lazio / Sardinia / Tuscany, Italy

One of the oldest cheeses in the world, once part of the Roman legions' rations. Today most of it is made in Sardinia. It is hard, salty and sharp, and it is the cheese for cacio e pepe and carbonara.
