Pavé Cobble

A small, ash-coated cheese shaped like a cobblestone, with a wrinkled rind over a dense, bright paste. The flavour is fresh, lemony and clean, becoming softer and more complex near the rind as it ripens. It looks dramatic on a board and tastes more delicate than its dark coat suggests.
