Oxford Blue

A soft, creamy English blue created in the 1990s and designed to sit somewhere between Stilton and the richer French blues. The paste is smooth and almost spreadable, with a mild, buttery sweetness and a gentle blue tang. It is a good introduction for anyone nervous of blue cheese.
