A sheep's milk cheese from the Basque Country and Béarn in the French Pyrenees. The texture is firm and smooth, the flavour sweet, nutty and buttery, with a gentle grassy note. In the Basque Country, it is eaten with black cherry jam from Itxassou, and that pairing is hard to beat.
