Old Winchester

Made at Lyburn Farm near Salisbury to a Gouda-style recipe, then aged for well over a year until the paste turns hard, flaky and crystalline. The flavour is sweet and nutty, with notes of toffee and browned butter that some people liken to a young Parmesan. It grates beautifully, but I would rather eat it in shards with a glass of dry sherry.
