Old Sussex

A firm, farmhouse-style cow's milk cheese from Sussex, aged until the texture is close and slightly flaky and the flavour turns savoury and nutty. It has the honest, full character I want from a mature English hard cheese. Serve it at room temperature with an apple and a slice of good bread.
