One of Normandy's oldest cheeses, from the Pays de Bray, best known in its heart shape. Local legend links the heart to the Hundred Years' War. The texture is firmer and grainier than Camembert, the flavour salty, tangy and mushroomy. It is one of the best cheeses to give someone you love.
