Made by the Bourne family in Cheshire, whose farm sits above the salt deposits that are said to give Cheshire its distinctive mineral tang. The texture is moist and crumbly, the flavour fresh, lemony and saline. Cheshire is Britain's oldest named cheese, and this is how it should taste.
