Montgomery's Cheddar

One of the benchmarks for traditional Somerset Cheddar, made at Manor Farm by the Montgomery family and clothbound rather than sealed in plastic. The texture is firm and satisfyingly brittle, with deep savoury, earthy and brothy flavours that build as it matures. This is the sort of Cheddar I use to remind people just how complex the style can be: not simply ‘strong’, but layered, lingering and full of character.
