Hard from Friuli / Veneto, Italy

A cheese from Friuli and the Veneto, first made by Benedictine monks. Young, it is supple and mild; aged, it becomes firm, nutty and savoury. In Friuli, it is used to make frico, a crisp fried cheese dish.
