Mont d'Or

Mont d’Or is one of the great seasonal cheeses of the Jura, made only during the colder part of the year and bound in spruce. As it ripens the paste becomes gloriously soft and spoonable, with rich dairy flavours and a distinctive resinous, woodland character from the wood. I wait for this cheese every year. Few cheeses make seasonality feel quite so immediate.
