Maroilles
Soft, washed rind from Nord, France
A square washed-rind cheese from northern France, first made by monks at the abbey of Maroilles over a thousand years ago. The rind is orange and pungent, the paste soft and supple, the flavour savoury and meaty. In the north, it is baked into a tart called flamiche.
