Majorero

Hard from Fuerteventura, Spain

A goat's cheese from Fuerteventura in the Canary Islands, made from the milk of the Majorera breed. The rind is often rubbed with paprika or oil. The paste is firm and dense, the flavour clean and milky with a sweet, nutty edge that sharpens as it ages.
