Livarot

A Normandy washed-rind cheese nicknamed 'the Colonel' for the bands of sedge or paper tied around it, which look like the stripes on an officer's sleeve. They were originally there to stop it slumping. The rind is orange and pungent, the paste supple and meaty, with a savoury depth and a long finish. Serve it with a glass of Normandy cider.
