Lincolnshire Poacher

Lincolnshire Poacher sits beautifully between the worlds of Cheddar and Alpine cheese. Made on the farm from the family’s own cow’s milk, it develops a firm, close texture with wonderfully savoury, nutty and occasionally pineapple-like notes as it matures. I have always loved cheeses that refuse to fit neatly into one box, and this is exactly that: recognisably British, but with a character entirely its own.
