From the high plateau of Champagne, Langres is a washed-rind cheese with a sunken top known as the fontaine. It forms because the cheese is never turned during ripening. Some people pour Champagne or marc into it. The rind is orange and wrinkled, the paste dense and creamy, the flavour pungent but surprisingly delicate. A theatrical cheese that is worth the show.
