Traditional Lancashire is made by blending curds from more than one day's make, which gives it a texture unlike any other British cheese: light, buttery and crumbly, almost fluffy when young. The flavour is fresh, milky and gently tangy, deepening with age. Crumbled onto a hot potato pie or toasted until it melts, it is one of Britain's great cooking cheeses.
