Kirkham's Lancashire

Mrs Kirkham’s is the name I reach for when I want to explain traditional Lancashire properly. Made from raw cow’s milk, the curds from more than one milking are combined in the classic Lancashire manner, helping create that distinctive buttery, crumbly texture. The flavour is bright, lactic and savoury with a lovely lemony lift. It is glorious on its own, but it also melts exceptionally well.
