Hard (often smoked) from Basque Country / Navarre, Spain
A sheep's milk cheese from the Basque Country and Navarre, made from the milk of the Latxa and Carranzana breeds and often lightly smoked. The texture is firm and slightly crumbly, the flavour nutty, buttery and gently smoky.
