Cheddar (clothbound) from Co. Cork, Ireland
A clothbound Cheddar from County Cork, made from the milk of the family's own herd. The texture is firm and crumbly, the flavour savoury and earthy, with a gentle tang. A good Irish counterpart to the West Country Cheddars.
