Harbourne Blue

A goat's milk blue from the Ticklemore Cheese Dairy in Devon. The paste stays strikingly white against the veining, and the flavour is clean, sharp and slightly fruity, with a hint of tropical sweetness on the finish. It is firmer and brighter than a cow's milk blue. I love it on a board next to something rich, because it cuts straight through.
