Made by the Holden family at Bwlchwernen Fawr in Ceredigion, one of Wales's oldest organic dairy farms, from the raw milk of their own Ayrshire herd. Hafod is a clothbound, Cheddar-style cheese: rich, buttery and earthy, with a savoury depth and a long, mellow finish.
