Washed rind from Co. Cork, Ireland
A washed-rind cheese from the Ferguson family's farm near Schull in West Cork. The rind is pinkish and savoury, the paste supple and creamy, the flavour earthy, mushroomy and gently nutty. The family also cure meats and smoke cheese on the farm.
